Resumen
El intercambio colombino se estudió primero en relación con Europa y América; posteriormente se exploraron las dimensiones asiáticas y africanas. Resulta útil observar, en este contexto, la actitud de las regiones islámicas respecto a los productos americanos: en vez de la desconfianza y el rechazo inicial de Europa, India y China, en el islam dichos productos fueron acogidos en fecha temprana e incorporados profundamente a la cultura culinaria. Ello se debe a factores climáticos, pero sobre todo a una larga historia de adopción de especies vegetales que tuvo como episodio central la llamada “revolución agrícola árabe”.
